Globe-trotting at Carta
The idea behind Carta is simple but ambitious: a menu that changes bimonthly, drawing on cuisines of the world. Since opening in 1995, the restaurant has featured the menus of the Caribbean, Russia, India, the American South, New England, Indonesia, Turkey, France and other delectable destinations, all served with a view of the romantic old streetcars along Market Street.
Currently, the theme is Mediterranean — with appetizers like melon, prosciutto, green and black fig salad with mint vinaigrette; stuffed mussels, in the style of Provençe with fresh tomato-wine coulis; a warm salad of sea scallops, fettucine and field greens with creamy tarragon vinaigrette; or confit of lamb shanks and garlic with grilled toasts and spicy greens.
Main courses now include grilled salmon with grilled fennel-tomato sauce, pommes frites and cucumber-spinach purée; roasted guinea hen with sauce diable, artichoke fricassee and fava bean-potato mash; and a 16 oz. grileld Porterhouse steak, Spanish style, with roasted potatoes, Romescu sauce and braised greens.
A summer berry-frangipane tart with Sabayon sauce or Spanish chocolate almond torte with sherry cream are good ways to end the meal.
Chef Rob Zaborny does careful research before launching into a new cuisine, and diners and critics have come to agree that any one of his experiments is worth a trip.
